This homemade red wine herb vinaigrette gets its bright tang from a tomato-y vegetable juice like V8 juice. You can season the mix with fresh or dried herbs, your choice. Either way, your beautiful salad greens will thank you for dressing them so tastefully!!

Red wine herb vinaigrette comes together in 5 minutes. Just put everything (except the herbs) in the blender jar and whir. Add the herbs but do not whir. That’s it. The recipe makes more than 2 cups of dressing–I figure if I’m going to get the blender dirty, I may as well make enough for the week!
Bonus: You know how olive oil congeals in the refrigerator? This red wine herb vinaigrette is made with both olive oil and avocado oil. Between the avocado oil and vegetable juice, this vinaigrette pours easily, cold, right from the fridge. You don’t have to remember to pull it ahead of time.
Fresh or dried herbs?
- In summer or when savory fresh herbs are readily available, mince and add those to your vinaigrette. Feel free to vary the herbs or use just one. I had fresh thyme, oregano, parsley and basil on hand, so those went in this last batch of dressing.
- If you have an indoor herb garden–yay! But when fresh herbs aren’t around, an Italian seasoning blend is a good option. You can also combine dried herbs in your own ratio, using oregano, thyme, marjoram, rosemary, basil or sage, all of which you’ll find in Italian herb blends.
For years and years, Robbie made our salad dressings. Sort of homemade, always the same basic recipe. What? How do you make a salad dressing at home and it’s not really homemade?
You start with a bottled dressing and doctor it up! Robbie divides a bottle of “Newman’s Own Classic Oil and Vinegar” into 2 bottles and adds a small can of V8 juice to each, plus (he uses extra) garlic, Italian seasoning and lots of freshly ground black pepper.
This red wine herb vinaigrette is the real homemade deal, my riff on Robbie’s “recipe.” Made with higher quality oils, it’s better for you, but still has that familiar tomato-y vegetable juice flavor that you will grow to love too.

Red Wine Herb Vinaigrette
Ingredients
- 1 teaspoon Dijon-style mustard
- 1/3 cup red wine vinegar
- 1 teaspoon balsamic vinegar
- 1 or 2 cloves garlic , minced
- 1/4 teaspoon fine sea salt
- 1/8 teaspoon freshly ground black pepper
- ½ cup extra virgin olive oil
- ½ cup organic avocado oil or grapeseed oil
- 5.5 ounces vegetable juice, r V8 juice oKnudsen Very Veggie juice
- 2 tablespoons minced fresh herbs or 2 teaspoons dried Italian seasoning
Instructions
- Put the mustard, red wine vinegar, balsamic vinegar, garlic, salt and pepper in a blender bowl. Add the olive and avocado oils and the vegetable juice. Blend until smooth.
- Remove from blender and mix in the herbs and chives, but do not blend. Taste for salt and add more if you think it's needed. Transfer to a bottle or other container.
